Bacon is crispy, delicious and more evenly cooked when you employ a simple technique used by professionals. The breakfast staple is a classic feature in a Full English, in a sandwich with some lettuce and tomato, or alongside a fried egg.
But after laying them flat on the pan, rashers can often become twisted and bumpy, meaning only some parts of it are in contact with the hot pan during cooking. As a result you can be left with a ropey mess that’s unevenly cooked.
But if you’re wondering how chefs manage to get bacon slices looking flat and beautifully cooked when they’re served up, the answer is surprisingly simple.
Atlanta-based chef Todd Ginsburg is a partner behind the city’s Rye Restaurants group. He previously sat down with Thrillist to discuss some top cooking tips he picked up over his career including using grill presses to get various meats cooked perfectly.
Also known as meat presses, steak weights, or bacon presses, the tool allows you to maximise the amount of contact the cut of meat has with the pan by pressing down upon the other side.
Todd uses in for various things including preparing pastrami and Spatchcock chicken.
But the expert foodie told the outlet it can also be great for keeping bacon flat during the cooking process.
All you have do it place the weight on top of the rasher while it fries to prevent those pesky bumps from forming, and then do the same thing again when you flip it.
Make sure you use an oven glove or kitchen towel to protect yourself from the heat though, as it can get pretty hot.
As well as helping to ensure its properly cooked, it also makes the clean up easier by preventing spit from the pan from escaping onto the hob and kitchen counter.
