Corn on the cob is a classic buttery side dish that’s perfect for sunny days, but there is an even better way to enjoy it. Boiling is a convenient cooking method, but it can cause most of the natural flavour and nutrients to leach into the water, which leaves the corn less vibrant and tasty.
Instead, Eb Gargano, a cook and founder of Easy Peasy Foodie, has shared the best way to make corn, which is to roast it in the oven. She said: “Love Nando’s corn on the cob? “While Nando’s flame grills their version, my version is adapted for normal kitchens… and roasted in the oven — but it’s no less tasty!”
To make corn even tastier, you only need a little salt and some olive oil, as both will greatly enhance the flavour and texture.
Salt draws moisture from the surface of the corn as it cooks, which helps concentrate the flavour and bring out this vegetable’s natural sweetness.
Oil obviously helps the corn roast and caramelise in the oven, making it crispy on the outside while still tender on the inside.
This simple recipe brings out the bold taste of the corn kernels without the sogginess that comes from boiling them.
How to make corn on the cob tastier
Ingredients (four servings)
- Four corn on the cob
- One tablespoon of salt
- Two tablespoons of olive oil
Instructions
To begin with, preheat the oven to 200C or Gas Mark 7 and slice each corn kernel in half, making eight pieces.
Mix the olive oil and salt in a bowl. Using your hands, coat each piece of corn in the salty oil mixture.
Place the corn on a non-stick baking tray and make sure they are not touching or crowded together, so you may need to use two smaller trays instead.
Eb said: “It’s crucial to ensure the cobs are spread out well over the baking sheet – if they are touching each other too much, or piled on top of each other, they may not cook properly.”
Then all you need to do is cook the cobs in the oven for 15 minutes. Check on the corn around the 10-minute mark to turn them.
With this quick, simple recipe, your corn on the cob will be crispy, caramelised, and taste much better than it usually does.
